This is a recipe I use quite often . The dough always comes out really soft have to try's a must.
500 g white flour
25g fresh yeast
1 teaspoon ( or a fraction less ) sugar
1 boiled potatoe
cherry tomatoes
olive oil

 1.  Boil the potatoe in slightly salted water , when cooked  remove  from pan but keep the water on one side. Then you need to mash the potatoe .
2  .Put the flour in a bowl and add 2 spoons of olive oil, 2 teaspoons of salt, the yeast ( remember that the yeast has to be broken up then add the sugar and a little warm water to it to get the fermentation going),add the mashed potato and also 1 and a half glasses of the cooked potato water. Work all these ingredients together until you have a soft consistency. Form into a ball and then cover the bowl over with a clean cloth and leave to rise for about an hour.
3.  When the dough has well risen press the dough into an oiled round oven tray. Cut the little tomatoes in half and then press them into the dough ( as shown ) above. Then sprinkle some dried origano and salt and finally add some olive oil....COOK for about 30-35 minutes in a hot oven at 220°.
If you like you can add some cheese about 10 minutes before it is finally cooked.

  1. Oh this looks delicious. I will try it, and as my hubby isn't a big fan of tomatoes I will get it all to myself;) Do you like leftover pizza for breakfast like I do?
