CHELSEA BUNS



INGREDIENTS.
250g plain flour
20g fresh yeast
30g castor sugar
125ml lukewarm milk
50g margarine,melted
FILLING
100g raisins or currants
65g butter, melted
65g granulated sugar
1 teaspoon ground cinnamon
50g chopped glacé cherries
GLAZE
2tablespoons apricot jam or sugar

Sift flour into a bowl and make a well.Cream the yeast with a little of the sugar and the milk and pour into the well. Sprinkle over a little flour,cover and leave in a warm place for 15 minutes, until frothy. Add the margarine with the remaining sugar and mix to a dough. Knead lightly then leave to rise for 1 hour.

Knead the dough again then roll out to about 3mm thick and brush with the butter. Sprinkle with the sugar,cinnamon,raisins or currants and chopped cherries. cut the dough into 4mm wide strips.Roll up one strip and place in the centre of a greased 25cm flan tin. Roll the remaining strips and place each one around the centre one forming about 8 buns in total. Leave in a warm place for 15 minutes. 
Preheat oven to 180 °C.  Bake in oven for 50 minutes.  Cool then brush with the warmed jam or sprinkle over some sugar.

COUNTRY APPLE-PIE

                                                    INGREDIENTS             
 
                             2 kg of Golden Delicious Apples
                             100g Sugar
                             100g Soft Butter
                             100gFlour
                             2 teaspoons chopped almonds ( optional )
                             a pinch of salt
                             450g Puff Pastry( I used a pack of ready to use )


                                             PREPARATION            
 Line a  25cm flan dish with the puff pastry and pierce slightly with a fork. 
 With 500g of apples make a pureé.
 Peel and slice the remaining apples.
 Add the flour, chopped almonds, sugar and soft butter. Mix together adding a pinch of salt.
 Spread the apple pureé over the base of the pastry.
 Put this mixture over the pureé in the flan dish.COOK in oven 180° for about an hour.
 Ready to serve.
EAT with either cream or ice-cream.

ITALIAN PIZZA ( FOCACCIA )

 This is a recipe I use quite often . The dough always comes out really soft ...you have to try it.....it's a must.
INGREDIENTS: 
500 g white flour
25g fresh yeast
1 teaspoon ( or a fraction less ) sugar
1 boiled potatoe
cherry tomatoes
olive oil
origano
salt




 1.  Boil the potatoe in slightly salted water , when cooked  remove  from pan but keep the water on one side.Then you need to mash the potatoe .
2  .Put the flour in a bowl and add 2 spoons of olive oil, 2 teaspoons of salt, the yeast ( remember that the yeast has to be broken up then add the sugar and a little warm water to it to get the fermentation going),add the mashed potato and also 1 and a half glasses of the cooked potato water. Work all these ingredients together until you have a soft consistency. Form into a ball and then cover the bowl over with a clean cloth and leave to rise for about an hour.
3.  When the dough has well risen press the dough into an oiled round oven tray. Cut the little tomatoes in half and then press them into the dough ( as shown ) above. Then sprinkle some dried origano and salt and finally add some olive oil....COOK for about 30-35 minutes in a hot oven at 220°.
If you like you can add some cheese about 10 minutes before it is finally cooked.

CHOCOLATE - CHIP MUFFINS

250g plain flour
2 teaspoons baking powder
half teaspoon bicarbonate of soda
175g caster sugar
100g chocolate chips (plus more for sprinkling later )
 250ml milk
90ml vegetable oil
 1 large egg
 1 teaspoon vanilla extract  
( mixture makes 12  muffins )


Preheat the oven to gas mark6/200°C and fill a muffin tray with paper cases.


Measure out the dry ingredients into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix both together, remembering that a lumpy batter makes the best muffins, then spoon into the waiting muffin cases. Sprinkle more chocolate chips on top then cook for 20 minutes or until the muffins are dark,risen and springy.

HOME-MADE CHRISTMAS MINCEMEAT

Once again it's time to make some traditional homemade mincemeat.I live in Italy and you just can't go out and buy some from the local supermarket so I have to rely on some home-made.I always follow Deliah's recipe.It never fails. I double up the quantity to make enough for making extra mince pies to give to friends. The only thing I dont add are the almonds.
